Rod and I are trying to eat better, so I tried a simple twist on spaghetti. Instead of pasta, we used spaghetti squash! I know, I even shocked myself.
Rod grew up eating spaghetti squash with parmesan cheese and butter, more as a side dish. I don't ever remember eating it in my life. I was trying to be brave and try something new and much healthier and was amazed at how good it tasted. The texture is crunchier than a noodle, but with spaghetti sauce and parmesan cheese, the taste was the same. Un-be-leav-able! I was in shock the entire meal. (sorry the picture doesn't look as good as it tasted. I'm new to taking pictures of my food - I was trying to copy Emily but her food pictures always look perfectly delicious!)
By the way, Happy Halloween! We only had a handful of trick-or-treaters stop by. It's not so busy when you live in the back yard. :)
Our IVF class is tomorrow morning so I'll let you all know how it goes! I'm kind of nervous, just because I don't know what to expect. Right after we get back I have two photography appointments. It wasn't the best timing, but I'll never pass up the work. It's headshots for two young girls (11 and 8 year old) so it should be fun.

We didn't have many trick or treaters here either. So now not only do we have what the kids got last night, but almost an entire bowl of stuff we bought.....ug....we'll be eating it for years!

That's great always good to try new things but you did have it last Christmas at our house when we convinced you it wasn't like regular squash
Wow I think we converted shannon to eating squash....I think we had 20 or so tricker treaters ....most were shocked we gave out toys rather then candy
