Easy Black Bean-Salsa Soup

Nothing says summer like hot black bean soup. ha!

The weather has been so rainy here lately that hot soup in June is actually very appropriate.

Last night I got home late and tried to figure out what to have for dinner...then I remembered this very quick, easy and delicious black bean soup.

And besides the fact that I realized this morning that I left the left-overs on the counter all night (ugh) we did enjoy our first bowl.

Easy Black Bean-Salsa Soup (revised)

2 (15 oz) cans black beans, drained and rinsed
1 can chicken broth (~2 cups)
1 cup chunky salsa
grated cheddar cheese
sour cream or ranch dressing
tortilla chips
  • In blender, combine chicken broth, salsa, and 1-1/2 cans black beans. Puree until smooth
  • Pour blended soup and remaining black beans into large pot
  • Simmer for about 5 minutes
  • Serve in a bowl with grated cheese and tortilla chips (sour cream or ranch dressing optional)
Easy, quick and delicious!
