Just because...

Pie on Wednesday.
Why not?

Sour Cream Lemon Pie
one of my favorites

Crust: Pastry for one-crust pie
Filling: 1 c. sugar
3 Tbsp cornstarch
1 c. milk
1/4 c lemon juice
3 egg yolks, slightly beaten
1/4 c. margarine or butter
1 Tbsp grated lemon peel
1 c. sour cream

Prepare & bake pie crust; cool.
In med. sauce pan, mix sugar & cornstarch well. Stir in milk, lemon juice & egg yolks.
Cook over med. heat til thick, stirring constantly.
Remove from heat. Stir in margarine & lemon peel. Cool.
Fold in sour cream. Spoon into cooled pie shell. Refrigerate at least 2 hours.
Top with whipped cream.
