Best pulled pork!

Yesterday I made the BEST pulled pork sandwiches for dinner. It was an all day crockpot adventure that seriously turned out like restaurant quality. I can't believe I haven't tried this before now. So I had to share. It's so easy!

(sorry the picture's blurry - my camera was on the hand-held setting and I'm not as still as my tripod)

BBQ Pork (crock pot)
  • 1 (14 oz) can beef broth
  • 1 onion cut up into chunks
  • 3 lbs boneless pork ribs, pork butt, picnic cut, pork roast, shoulder, or pork loin (I used the picnic cut - it's cheap and still very tastey)
  • salt and pepper
  • garlic powder
  • dash liquid smoke (I had it so I used it - it may not have even made a difference)
  • favorite BBQ sauce
1. Spray crock pot with cooking spray to avoid sticking
2. Pour beef broth and dash of liquid smoke (if you have it) into slow cooker
3. Add chunks of onion to bottom of crock pot
4. Season pork roast with salt, pepper and garlic powder and place in crock pot over onions and beef broth
5. Cook on low for 8-10 hrs (I did it for 8 on low) or high heat for 4 hrs (not sure if it would turn out the same on high)
6. When done, remove pork from crock pot (discard liquid) and shred pork with 2 forks; pull off excess fat
7. spray baking sheet with cooking spray for easy cleaning and spread out shredded pork on a baking sheet. Spread bbq sauce all over pork and put under the broiler until it's bubbly and barely crisps the edges of the pork (about 5 minutes - just keep checking it)
8. Serve on a toasted bun

SOOOOO GOOD!!!

I decided that next time I will divide the pork after shredding and save half of it for making mexican dishes and mix the other half with bbq sauce.

Great job, Shannon! It looks so good! The liquid smoke does make a difference, so does cooking it on high (not as tender). Next time, bring some and we'll make tamales!

pulled pork has got to be at the very top of my list. i just can't get enough. i just brought my grocery list into the room to write all the ingredients down. i almost packed the crock pot this weekend... good thing i didn't or i'd be digging it out of some random box!
