I have to say that the store intimidated me. I'm a sewing newbee. It all intimidates me. So many rows of fabric. I don't know what fabric is best for certain projects, what needle you need for different types of materials, what stitch you use, what fabric types go best with others; so many embelishments, threads, cutters, pillow stuffers, pillows, etc. etc. I don't know the sewing terminology. I have to google every other word when reading about sewing projects. I feel like I'm on the edge of a very big learning curve and it hurts my head.
Walking down the isles, I envied every woman I saw, thinking "Wow, you know how to sew." Even a man confidently brought his bolt of fabric to be cut. In the back of my mind the whole time I kept thinking, "Is anyone here going to figure out I have no idea what in the heck I'm doing?!"
Did I just waste my money on fabric that will never reach its pillow potential? Time will tell my friends.
For now, this is what I'm starting with.
Let's hope it ends well.

I am drooling over your cutting mat. I have NEVER had one, and it is so cool! You will be able to many things, including quilting!
I would say for a pillow, you can use just about any type of fabric, unless you can use your sewing machine to sew leather...
