I made this Sweet Mustard Roast recipe from A Year of Slow Cooking several weeks ago. I wasn't sure what I would think of using molasses and dijon mustard on a roast, but it was delicious
We used it for bbq sandwiches (whole wheat buns and our favorite bbq sauce) and for tacos (tortillas, salsa, ranch or sour cream and veggies like onion, peppers, etc.).
And, as I found out, it even freezes well. A few weeks ago, I got it in the crockpot a little later than I had planned. So instead of eating it for dinner, it ended up not being done until like 9pm. It's bed time - roast anyone? So I shredded it and put it in the fridge.
It so happens that over the next couple days we had family get-togethers with meals and left-overs to bring home with us...so there sat the roast. All cooked and no where to go. So I decided to throw it in the freezer (*already shredded) and it froze perfectly. We were able to reap the benefits of the roast long after it was cooked and it tasted as fresh as it did the day it was cooked.
By the way...I'm so glad it's Friday tomorrow. To say I'm tired is an understatement. I just have to keep voicing how exhausting this job is! Honestly I think it's the heat more than anything - it's almost impossible to find relief without shade or a/c. It has been a little unbearable this week and has left me a bit wilted. It's a good thing I like the kids!

that sounds soooo good! i'm gonna have to try that recipe out!!! I can think of so many things to do with it!!
I can completely understand your feelings of being wilted and drained!! We don't have a/c here and with the humidity up we are all dying!! I love monsoon season, but i'll be glad when it winter! I'm sooooooo ready for cooler weather!!
So how are things going? are you guys still doing ivf?
