The next step in the process of getting my cholesterol in check, was meeting with a cholesterol specialist this week. Luckily, I had already studied up on the subject and had begun making many of the healthy changes she suggested.
The one thing I was shocked to learn is that one cube of cheese is equivalent fat-wise to a bowl of ice cream. What?! I know, my jaw dropped too. I have already cut cheese out, but wow - the guilt factor of ever eating it again has dramatically increased.
I feel good about the changes I've made so far and hope that in 6 weeks when I see her again, my bad cholesterol will have dropped as we're hoping it will.
So goodbye beef patties...

They really are pretty good.
I do have to say though, it's a little strange eating a "burger" with veggies and soy beans peeking out at me with each bite, but I'm getting used to it.
We also bought some tofu that we're going to try. I'm still a little scared, but we'll go for it one of these days.
I also made some healthy muffins to eat for breakfasts and snacks that have come in handy. They're so darn healthy - full of whole wheat, flax seed, applesauce, walnuts and berries. A lot more dense than a cupcake, that's for sure, but much healthier.
You wouldn't believe all the things I've passed up at work since cutting out the junk - I never realized how much food I faced every day...and didn't pass it up until now...and I'm realizing a lot of what I'd been eating wasn't even food. It was more like plastic with cheese powder. Cheetos anyone?

i'm sick hearing that just ONE cube of cheese equivilates to soooo much fat. i eat soooo much cheese!! this sux! but oh my your salmon burger looks delish! keep up the good work. we lost track of our healthy kick back in january, but i think its about time to get back on the veggie train.
Ouch about the cheese! But good for you for making positive changes! I am a fan of veggie burgers, my favorite being Gardenburgers but they are harder to find lately. One tip I have, since you didn't ask, is that you can cook them in the toaster. I put it on the highest setting and usually run it through twice. Much better than the microwave and easier than the grill!
If you find a good tofu recipe share it! Have you tried quinoa?

The burger looks good! Even I would try it! And I love your new "cupcakes!" I can't stand plastic cheese slices...they look like the plastic wrapper melted right on it. Yuck!

that cheese comment hurts-seriously! we are a cheese eating people around here! But I do have to say that I love me some veggie burgers. And i'm not sure if it's a good thing or a bad thing that I'm the only one that likes them! hehe....good luck!!!!
