While we're waiting...

So we still have 11 more days until the pregnancy test. It's going by a little s...l...o...w.

After the embryo transfer, it usually takes from 3-5 days for implantation to occur. The implantation process is pretty intricate - it takes just the right mix of proteins and hormones between the embryo and the uterine lining. Counting embryo transfer day, it's been 4 days...so maybe it's already happened?? We hope so!!

Anyway, in the mean time, here are some things we've been up to. By the way, it snowed a bit today. Nothing stuck here in Lindon, but another storm is on its way for the weekend. It's strange not to have snow on the ground this far into December, so I won't mind a little wintry weather. :)

We put up our little tree - it fits perfectly into our small space.

Look at Rod's cute little cowboy stocking he had as a child. My stocking is still at home with my parents, so I just put up a generic red one. We also added a couple little ones for good luck!

I found a favorite new Christmas treat - Marshmallow-Carmel Corn, compliments of my friend Felicia and her son Colin.

This is SO good it's incredible...and fat free...yah right. See the recipe below - you've got to try it. I'm going to give it away to friends this year...and of course eat a little myself.

Caramel Corn

1 cup of butter (2 sticks)

1 cup brown sugar

1/2 bag of marshmallows (mini or regular)

2 bags of microwave popcorn (popped / take out the unpopped kernels)

Melt the butter and add the brown sugar. You can do it in the microwave, but make sure the sugar dissolves in the butter. Add the marshmallows and mix briskly until they are well incorporated. This takes a little time and muscle.

Add the two bags of microwave popcorn and mix. This is the perfect mixture of salty and sweet!


Last but not least, here's a great way to use left-over turkey. It's a casserole I found on allrecipes.com (thanks Rebekah for recommending the site) and I modified it a little. SOOOO GOOOD!!

Turkey Tetrazzini II, modified
Makes 4-6 servings (this is the halved version)

8 oz.uncooked spaghetti
Olive oil
1 tsp minced garlic
1/4 c. chopped onion
1/4 c. all-purpose flour
1-1/2 c. chicken broth
1 c. milk
2-3 Tbsp. sour cream
2 c. chopped cooked turkey
3/4 c. grated parmesan and asiago cheeses
Frozen peas
1-2 Tbsp. butter (melted or in chunks to top bread crumbs)
Bread crumbs with seasoning (I used fresh bread crumbs mixed with Herbes de Provence that I used for another recipe)

Directions
  • Preheat oven to 350 degrees
  • Lightly grease a medium baking dish (I used an 8x11.5)
  • Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for specified time on package. Drain, and place in the prepared baking dish.
  • Add olive oil to pan until hot and sautee 1 tsp minced garlic & chopped onion until tender.
  • Add flour and cook a few minutes
  • add chicken broth, milk and sour cream and cook additional 5 minutes
  • At a thickened consistency, add some frozen peas, chopped turkey, and parmesan and asiago cheeses.
  • Pour mixture over noodles in prepared dish
  • Top with seasoned bread crumbs and melted butter on top (I put little chunks of butter on top and let it melt in the oven)
  • Bake for 40 minutes (bread crumbs become lightly golden brown)

Nothing I've made, in what seems like forever, has even tasted good but this was deeeeelish!! I'm not usually a "casserole with peas" kind of person but this is a definite keeper!

Love the post! A little bit of everything...tree, stockings, and treats! The popcorn is addicting...be forewarned! I'll have to try the Tetrazzini...looks good!

Glad you love the site, I use it on a regular basis! That popcorn looks so yum!!!

I gotta tell you I'm on pins and needles for the 19th too. I was telling Dan the other night that I've never wanted any 2 people to be parents more than I want it for you guys. Don't do too much and it'll be here before you know it!!!! :O)
